Ingredients:

-1 pack of dumpling/empanada

-Dough wrappers (available at any supermarket near your apartment)

-500g Yellow sweet potato (boiled)

-100g Ground almonds

-Lemon zest

-Cinnamon powder and sugar

-Oil for frying.

Preparation:

-The Filling: Boil the sweet potato until soft and mash it with a fork into a puree.

-Mix it with the almonds, lemon zest, sugar to taste, and a generous pinch of cinnamon.

-Assembly: Place a spoonful of the mixture in the center of each dough wrapper.

-Fold the dough over and seal the edges with a fork (the classic method!).
